Grapes: 90% Chardonnay, 10% Pinot Noir.
Alc/Vol: 12,5%.
Ageing: A minimum of 30 months of ageing on the lees.
Tasting: fragrant, typically reminiscent of dried fruit, yellow apples. Pleasantly fresh, with delicate mineral undertones and hints of fruits. Perlage is fine and persistent.
The Trentodoc by Casa Pedrotti is the only wine matured in a natural and ecologically sustainable environment, the "Grotta dello Spumante," hollowed into the mountain at the heart of the Dolomites (UNESCO World Heritage Site). The cave¡¦s micro climate is ideal for fermenting and ageing on the lees, giving a Trentodoc a fine and lingering perlage. Trentodoc Brut Millesimato is produced using the traditional method with a second fermentation in the bottle. Pedrotti makes this wine in very limited quantities using Chardonnay and Pinot Noir grapes grown on the highest, sunniest hilltop vineyards of Trentino. Forty long months of ageing on the lees are required to make TRENTODOC Brut Millesimato by Casa Pedrotti. Trentodoc Brut Millesimato represents the jewel in the crown of the broad selection of Trentino wines. Available in the most prominent and exclusive Italian restaurants. Among the most prestigious recent awards are: Quality prize in the Bollicine d'Italia guide by Gambero Rosso and also cited in the most important national guide ("Gambero Rosso", "Vini d'Italia", "Bere spumante").
