Production Area: Trentino
Grapes: 75% Chardonnay, 25% Pinot Noir.
Alc/Vol: 12,5%.
Ageing: A minimum of 30 months of ageing on the lees. Tasting: Fine bouquet, reminiscent of small red fruits. Velvety, pleasantly round on the palate, well-balanced freshness and minerality, with undertones of cherry and raspberry. Perlage is fine and persistent. Soft pale rose colour. The Trentodoc by Casa Pedrotti is the only wine matured in a natural and ecologically sustainable environment, the "Grotta dello Spumante," hollowed into the mountain at the heart of the Dolomites (UNESCO World Heritage Site). The cave¡¦s micro climate is ideal for fermenting and ageing on the lees, giving a Trentodoc a fine and lingering perlage. Trentodoc Rose Millesimato is produced using the traditional method with a second fermentation in the bottle. Pedrotti makes this wine in very limited quantities using Chardonnay and Pinot Noir grapes grown on the highest, sunniest hilltop vineyards of Trentino. Thirty long months of ageing on the lees are required to make TRENTODOC Rose Millesimato by Casa Pedrotti. Available in the most prominent and exclusive Italian restaurants.
